Tafi & the Death by Chocolate Cake



Tafi has a weakness for chocolate. When he's looking for a sweet something & cupcakes just won't fix it, what Taf wants is chocolate. The more chocolate the better it is as he says about his "Death by Chocolate" cake.

I like to think that a happy Tafi is well... a happy Tafi & I like a happy kid!

Here is his Death by Chocolate cake recipe:

1 devils food chocolate cake mix (he likes Duncan Hines)
1/2 cup of unsweetened dark chocolate powder (I like Hersheys)
1/2 cup of chocolate syrup (again I like Hershey's)
3 eggs
1 cup of water
1 cup of mayo (that's Best Foods mayo!)

Mix the cake according to the package - adding in the dark chocolate powder, eggs, water & mayo. Mix until blended.

Get a 9x13 inch cake pan ready by buttering it up & flouring it or spraying it with vegetable oil spray & dust it with flour.
Pour the cake mix in.
On the top of it, carefully spoon the chocolate syrup on to the batter. Once you have all of it on there, take a knife & swirl it into the batter but do not mix it in!

Pop it into the oven @ 350 degrees for about 25-30 minutes or however long it takes to bake right in your oven.

When it's done, pull it out & set it to cool down.

But while its still hot... this is what you're gonna do to it... get a chopstick (or use the end of a wooden spoon) and poke holes in to the cake. Nice neat holes if you can manage it and if not - don't worry about it. The frosting will hide the damage!

Next get a can of fat free sweetened condensed evaporated milk - open it and spoon the entire contents of the can over the cake. Go slowly so the cake has a change to absorb this yumminess. When you're done - you can leave it on the counter to cool off. I'd cover it so the kids don't get to it.

When its cooled off enough to handle the pan, put it in the fridge to chill.

Chocolate Pudding Frosting:

2 boxes of sugar free chocolate pudding
1 cup of skim milk

Mix in a large bowl & leave in the fridge to set for about a half hour.

When the cake is chilled enough, Tafi likes to put a tub of fat free cool whip on the top of his cake, put is back in the fridge to set & then frost it with the chocolate pudding.

If he's really feeling a chocolate craze, he also sprinkles mini chocolate chips or chocolate sprinkles on the top.
