Katzu's Sunday SookiDoodles

Katzu knows that Sunday afternoons are made for cupcakes. He looks forward to baking with me & before I can even get myself turned around, he already has the big red mixing bowl, measuring cups, pans & paper liners, cake mix, eggs, oil & water lined up & ready on our table.

As soon as the LDS General Conference last session finished, Katz was headed to the kitchen. He really liked Tafi's SnackyDoodles that we made a few weeks ago. He wanted to do something similar but a little bit different from his brothers signature cupcake. (We won't get into the minor squabble between Taf & Katz with Taf insisting that SnackyDoodles were his & his alone!) We added the syrup from a can of peaches.

So Katz's came up with something like it but different. He calls his,"SookiDoodles".

1 box white cake mix
1 cup water
3 eggs
1/3 cup vegetable oil
1 tbs almond extract
1/2 cup peach syrup

Mix until blended well.

We used mini-cupcakes for the 1st batch & regular sized cupcakes for the second round.

Into each of the paperliners, Katz sprinkled a pinch of cinnamon sugar then put 1 tbs of cake batter on top & another sprinkle of cinnamon sugar on the top of that.

The mini's went into the oven @ 325 degrees for 15 minutes. Brought them out & cooled them down for about 20 minutes. The regulars went into the oven @ 325 degrees for 20 minutes. Cooled for 30 minutes.

Katzu chose a vanilla bean cream frosting & sprinkled the tops with more cinnamon sugar.

I liked my SookiDoodle without frosting because in the oven, the sugar on the top caramelized & was slightly crunchy.

(I confess I ate 4 mini's. 2 with frosting & 2 without. I promise to run an extra mile this morning!)
